Turtles and tortoises as human’s food in Italy

The purpose of this work is to detect the use, by humans, of turtles and tortoises as a food resource. There are reports of numerous findings dating back to prehistoric times up to the Middle Ages that came to light during excavations in civil and especially monastic housing contexts. From the present study we can see how the situation has completely changed today, although it is still present, albeit occasionally, in some areas of central Italy.
